My husband is a diabetic and pasta really messes up his blood sugar. This is a fantastic alternative to spaghetti pasta. There are so many recipes for this online, and it is so easy to cook! Even Miss Haley (who is a finicky eater) doesn't realize she is eating a vegetable!
