MADE THIS FOR THE "HAPPY HANUKKAH" CHALLENGE. LATKES (POTATO PANCAKES) ARE A TRADITIONAL DISH (ALONG WITH JELLY DONUTS) FOR HANUKKAH! FOODS COOKED IN OIL ARE USED TO SYMBOLIZE THE 1 CRUDE OF OIL THAT SHOULD HAVE LASTED FOR ONLY 1 NIGHT THAT BURNED IN THE TEMPLE WHILE THE MACCABEES WENT TO GET MORE OIL. THAT LITTLE OIL BURNED FOR 8 NIGHTS, LONG ENOUGH FOR MORE OIL TO BE BROUGHT, THUS THE CELEBRATION OF HANUKKAH FOR 8 NIGHTS!!
