Anyone who gardens knows that you can check cucumber vines everyday and suddenly you've got 3 or 4 large cucumbers that are "unusuable". This recipe lets you use those overripe cucumbers and not have to throw them away. I will personally vouch that they really do taste like cinnamon apple rings. I have canned many a jar of these and they are wonderful!!!
