Just like cucumbers, you can check zucchini vines everyday and suddenly large, unusable ones appear. These are exactly the ones you want to use for this recipe, or you can use smaller ones. This relish is not a sweet relish nor is it a sour relish. It is great on hotdogs, hamburgers, or use it in potato salad, tuna salad. It is absolutely delicious! You don't even have to have a garden to get the ingredients, you buy everything at the store.
