I use several tools. Sometimes I use the Magnetic Lasso first to get the rough outline and then go into Quick Mask Mode to tidy up the edges. I use layer masks alot too and find them very useful as you can easily 'put back' if you have erased too much. I do use the pen tool ocassionally but find it a slow method.
