I always create a page honoring the winners and announce the winners in both the editor's desk forum and the challenge forum. You can see the winners of all the challenges that I have hosted by going to my home page and viewing my scrapbooks. You can see the winners of the recent challenges by viewing the announcements in the forums as well. I usually have the recent winners pages featured on my home page.
