I've used 2 programs, Nova Photo Explosion and PSE. In Nova I had to actually go around the circumference with selection dots to select the item I wanted to keep in color; it makes a duplicate that I can then place back over the original pic after I have converted it into black/white or sepia. PSE is a lot simpler, it lets you select what you want to keep simply by clicking a few places on it then selecting a different tool and clicking several places on the remainder of the pic that you don't want then you can copy the color portion back onto the black/white photo and TADA you have a little part that is in color. If you don't use PSE (cause I don't think anyone uses Nova), then I don't know how other programs accomplish this. You might want to post in the topics which program you use and someone familiar with it will give you some help.

In PSE on the tool bar click on Edit (I think) and the drop down menu will have a tool called Magic Extractor, it is really very, very simple. If it isn't Edit, click on a couple of the other options on the tool bar and look for the Magic Extractor on the drop down menu. I'm at work and don't have PSE on this computer.
